FAMILY FAVORITE BUFFALO RECIPES

GRAMMA'S DUTCH SPICED ROAST

Slow -n- Easy

INGREDIENTS:
  • bison roast 4-5 pounds
  • onion powder
  • garlic powder
  • steak spice
  • nutmeg
  • all-spice

PREPARATION:
  1. place bison roast in oven roaster with one inch of water.
  2. generously season roast with spices, especially nutmeg and all-spice.
  3. aluminum foil the roaster top and place roaster lid over top foil.

ROASTING:
  1. place roast in oven and heat to 400 fahrenheit for 40 minutes.
  2. turn heat down to 250 fahrenheit and allow to roast for 3-4 hours.
  3. take roast out and set on stove for 20 minutes before removing lid.

GREAT CANADIAN GRILLED SANDWICH
Quick -n- Easy

INGREDIENTS:
  • cold cut roast bison
  • Canadian rye bread
  • Canadian cheddar cheese
  • diced mushrooms
  • chopped yellow pepper
  • steak spice
  • mayonnaise
  • margarine / butter

PREPARATION:
  1. fry mushrooms and yellow pepper with steak spice.
  2. butter outside of rye bread, place face down and spread mayonnaise on inside.
  3. add fried mushrooms, yellow peppers, thin sliced roast bison and cheddar cheese between two slices of rye bread.

GRILLING:
  1. heat BBQ grill to 500 fahrenheit.
  2. grill both sides of sandwich to desired browning.
  3. shut flame off and allow to warm in covered BBQ for 3-5 minutes.
